World Buckfast Day 4 Course Feast! Main Course: Buckie Bourguignon

Ingredients:

·         2 lbs Shin Beef cubed

·         6 oz. Streaky Bacon

·         6 oz. Mushrooms

·         2 cloves Garlic crushed

·         4 oz. Butter

·         1 tablespoon Olive Oil

·         1 large Onion

·         1 tablespoon Flour

·         Parsley

·         Bottle of Buckfast

·         10 baby Onions

·         Bouquet Garni

·         Salt/Pepper

Method:

1-      Using a large ovenproof casserole brown the beef quickly in oil and butter.

2-      Add onion and cook until transparent.

3-      Add flour, bouquet garni, garlic and seasoning. Cover with Buckfast and place in oven 150 degrees C for 1 hour.

4-      Separately cook diced bacon until crisp and baby onions until golden. Remove casserole and add the bacon and baby onions. Cook for 30 minutes.

5-      Add in mushrooms and cook for a further 15mins.

Remove bouquet garni, add parsley and serve.
